The emperor penguin is the largest penguin in the world and the only one that breeds in the harsh winter of Antarctica. Diving up to 1,750 feet below the sea ice and for as long as 20 minutes, emperor penguins can travel as far as 600 miles in search of food.

Apple Upside Down Cake

What can you make with just two apples?  How about a apple upside down cake.  This cake is from an old fashion heirloom recipe.  It is simple no fuss comfort food from a few simple ingredients that is from your pantry.  The cake is baked in a 9 or 10 inch skillet so no special baking pan is needed. I baked mine in a square iron cast 9 inch skillet. Any heavy skillet will work.  You don’t even have to be good at baking to make this.

Butter and sugar are placed in the skillet and cooked on top of the stove until the sugar is melted. Then thin sliced apples are next added with a handful of raisins to the skillet.  The apples can cook on low heat while you mix the cake batter.
