Sounds Fabulous!

Wonderful little bites of cream cheese pastry and sweet and tart filling. Perfect for the holidays and cookie exchange.  I was able to get 80 little mini tarts from the recipe.  Normally I make tassies but one of my grandchildren has a nut allergy.  I saw this wonderful cranberry jam filling here.   I knew this was perfect to make these little cookies. I could put my little tart baking trays back into service that I have had for decades.

The little tart cookies turned out wonderful.  They are pretty as well as good.

We just bought 5 1bs of raw coffee beans to roast.  “HE” is setting up the old roaster and we should have a cool afternoon of coffee smell in the air.

It is set up right outside the back door on an old shaky baker’s rack.  I’m in a panic because I think the old roaster will start a wire fire or it will sprinkle and short out the oven but “HE” thinks all will be well and we’ll have unique and flavorful  coffee.  “HE” wins and I’ll just worry.  We’ll see.

This recipe calls for 4 staples that I keep on hand. Honey, lemon juice, parsley  and soy sauce. Because I keep them on hand I have found many dishes that calls for those ingredients. These items are easily found at local stores in small inexpensive sizes.  I store the lemon juice in the refrigerator after it has been open. Since I drink ice tea during the summer months. I like lemon and honey for my tea. Even though you have to maintain a frugal kitchen you will find these pantry staples important to make cheap meals sing with flavor.

Chicken thighs are the least expensive cut of chicken you can buy.  It is great for braising and stewing because it holds up in the process better than other parts of the chicken. Thighs are my first choice when I am trying to stretch a dollar. I always buy them with…

This pie is an old recipe that I have had since I was a kid in the 1950’s. The pie crust must have it’s roots in Australia’s desert, pavlova. This pie was originally in the 1952 Betty Crocker Cookbook. This recipe is different because it is made in a pie pan with a circle of parchment paper in the pan.  Also this recipe calls for crushed saltine crackers and nuts that is folded into the meringue to give it a wonderful texture. I also added a few videos to watch on how to make meringue.

This is a low cost desert to make and can be adjusted with less sugar and salt free crackers. I loved this pie as a kid. Some cooks are afraid to make meringue, but it is not hard.  You just have to remember that your bowl and beaters are real clean before you us the mixer…

Baked salmon in aluminum foil

Recipe (4 servings) ingredients:

  •  4 salmon filets (skinless)
  • 450g asparagus
  • 1 garlic clove
  • 1 lemon finely sliced
  • fresh dill
  • 2 tbs olive oil
  • salt, pepper

Preheat the oven to 200°C. Place 7-8 asparagus in the center of aluminum foil. Drizzle 1 tbs olive oil over the asparagus and season with salt and pepper. Rinse the salmon fillets and season each side with salt and pepper. Layer each fillet over the asparagus and sprinkle the upper side with 1 tbs olive oil mixed with minced garlic. Top with fresh dill and a couple of lemon slices. Wrap each foil side inward over salmon fillets and then fold in top and bottom of foil to enclose. Bake for about 30 minutes, until salmon is cooked. Serve with boiled vegetables and/or mashed potatoes.

Unwrap and enjoy with a cold glass of white wine !

What can you make with just two apples?  How about a apple upside down cake.  This cake is from an old fashion heirloom recipe.  It is simple no fuss comfort food from a few simple ingredients that is from your pantry.  The cake is baked in a 9 or 10 inch skillet so no special baking pan is needed. I baked mine in a square iron cast 9 inch skillet. Any heavy skillet will work.  You don’t even have to be good at baking to make this.

Butter and sugar are placed in the skillet and cooked on top of the stove until the sugar is melted. Then thin sliced apples are next added with a handful of raisins to the skillet.  The apples can cook on low heat while you mix the cake batter. butternut-soup2-2This soup is super easy to make. Light and creamy . Perfect for a chilly day!

Ingredients:

  • 1 large or 2 medium Butternut Squash
  • Olive or coconut oil
  • 1/2 of an Onion chopped
  • 1 Celery Stock chopped
  • 2 Cloves of Garlic
  • 1/4 to 1/2 tsp Nutmeg
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Cayenne
  • 1 tsp. Turmeric
  • 2 Bay leaves
  • Salt and Pepper
  • Vegetable Stock
  •  Almond or Coconut milk

To Make This Soup:

  1. Cut the squash in half (length wise) and remove the seeds and pulp.
  2. Brush oil of your choice on the flesh of the squash.
  3. Salt and pepper the squash.
  4. Cover the tops or flesh part of the squash with foil and place foil side down on a baking sheet.
  5. Bake at 350 degrees for 20 to 45 min  depending on the size of the squash.

Dear Dru,

There are only seven days left until President Obama leaves office. But before he does, Just Label It is calling on the President and his administration to take action on GMO disclosures one last time.

Congress passed a national GMO disclosure law last summer, but the U.S. Department of Agriculture plans on asking consumers to weigh in before it starts writing the GMO disclosure rules. President Obama must take action before Jan. 20 to ensure that the process begins and GMO labels hit store shelves as soon as possible.

The USDA is tasked with implementing the GMO disclosure law, which means making important decisions on how and where GMOs will be disclosed. This is a long process and consumers will have the chance to make their voices heard.

If the USDA is going to stay on track with its deadline, President Obama needs to instruct his administration to begin the rule-making before he leaves office.

Tell President Obama: Please begin the rule-making process for GMO disclosures before Jan. 20.

Ingredients used: ready made pizza dough base, tomato and herb pizza sauce, mozzarella, baby spinach.

Get little helper to poke holes with a fork into the base.

Next, spread the tomato and herb sauce on the base.

Cut the mozzarella ball into slices (which I would not allow my little help to do), and place onto base/sauce.

Cover in spinach leaves.

Place in oven on gas mark 7 for approximately 15-20 minutes.

This is a really simple, easy meal for children to help prepare, and is very tasty.

(You can of course use whatever ingredients you wish, and it doesn’t have to be vegetarian).

Like my Greens: Swiss Chard, Spinach, Parsley, Cilantro and Cucumber but Kale….it TEARS MY GUT APART; as does too much broccoli, Raw Turnips or Beets and other root veggies. I have diverticulitis and IBS so people with those conditions should be very careful of what they put in their juice or smoothies.

I’m not a big one for fruit in my drinks or carrots either because I’m also a diabetic but I do use some apple, like 1/2 of one. Also I prefer juices to smoothies preferring to eat my yogurt along with my drink to resemble a meal.

My very simple and very non-objectionable to my gut is: 1/2 green apple, 1-2 stalks celery, 2/3 to a whole cucumber, lots of parsley don’t really have a measurement…just a handful or two. Then plain yogurt on the side with it.

May not be varied enough to get the maximum nutritional benefit but I’m not on the toilet all day or grabbing my gut and crying. It can get that bad when you include Kale, Broccoli, Raw Beets and so on as my “HE Who Will Not Obey” is wont to do. He makes me a small glass first and then uses my base to add all his “stuff”.
